1 lb. ground beef
2 cans Kidney Beans
1 can Black Beans
1 can Corn
1 can Diced Tomatoes
1 pkg. Taco Seasoning
Water if needed
Optional Toppings:
Cheese
Sour Cream
Tortilla Chips
Avacados/Guacamole
Brown ground beef. Drain grease. Add the rest. Stir, simmer, enjoy! Yields: approx 6 servings.
Price Guesstimate: $6-ish (not counting the toppings)
Steph's Comments: I love this soup because you can just add whatever you happen to have in your pantry - I mix up the bean combos all the time. Oh, and I was just thinking that it would be yummy to cut up some other veggies - onions, green peppers, etc. But I don't usually do that. Also, you could leave the beef out if you want and just add more beans - that would actually be really yummy!
We also call this must-go soup. When I make black beans and rice ( I use the bagged beans--they're way cheaper), there's usually leftovers, so I throw those in a can of salsa, some diced tomatoes, corn, green beans, and whatever other vegetables are in the fridge--it always tastes great! (but usually we don't add meat--so it's one of our vegetarian dishes) And then if there's leftovers (there usually are) I blend it all up, mix it in some cooked tri-colored corkscrew noodles, throw cheese on top and have a casserole for the next night (or a freezer meal for a few nights later). Makes 3 meals really simple to prepare.
