Apple Carrot Muffins

2 eggs
3/4 c. sugar
1/4 c. oil (or applesauce)
1/2 c. milk
2 c. flour
2 tsp. baking powder
1/2 tsp.soda
1/2 tsp. salt
1 tsp. cinnamon

2 c. Granny Smith apples, chopped
1/2 c. carrots, shredded

Mix eggs, sugar, oil, and milk. Sift & add flour, baking powder, soda, salt, and cinnamon. Bake @ 325 for 20-25 minutes. Yields: 16 muffins.

Price Guesstimate: Cheap - I don't know how to add up baked goods! :)

Steph's Comments: If you like muffins, you will LOVE these. I don't know where I first got this recipe, but they always remind me of my sister, Heather, because she loves muffins, especially these ones! I know it sounds weird to have apples and carrots in, but they are delish! They'd make a great snack to have around, and they freeze really well. I haven't tried it, but I bet they'd be great with wheat flour!
