1 c. peanut butter
1 c. sugar
1 egg
Combine all ingredients. Mix well. Using your hands, roll the dough into one-inch balls and drop onto a lightly greased cookie sheet. Bake for 10-12 min at 350. Press the tines of a fork into each cookie while still soft.
Price Guesstimate: $1-2
Steph's Comments: I put this on here not because they're awesome cookies, but because they are FABULOUS to do with kids. 3 easy ingredients, and they can help with the ball rolling. They're good enough that your kids will love them, but I'll admit that they're not the world's best! (Still though, I keep finding myself breaking off pieces and eating them, so they must be pretty good!) :) Fun, cheap thing to do with the kids, especially if you're looking for a "C" activity (that's the preschool mom in me speaking!).

Banana Oatmeal Chocolate Chip Cookies
3/4 c. shortening
1 egg (beaten)
1 1/2 c flour
1 tsp. salt
1 Tbsp cinnamon
1 c. sugar
1 c. mashed ripe bananas (3-ish)
1 3/4 oatmeal
1/2 tsp. soda
1/4 tsp. nutmeg (opt but good)
1 pkg. chocolate chips
Mix all together. Bake @ 400 for 10-12 min. Makes about 4 dozen cookies.
Price Guesstimate: I don't try and guess on baked goods! :)
Steph's Comments: This is my mother-in-law's recipe, and it's a great way to use old bananas! My mother-in-law had 3 boys and they would (and still do!) gobble these up. They're a really tasty treat. I haven't tried it yet, but I'll bet you substitute applesauce or mashed beans for at least part, if not all, of the shortening to help cut down on the fat. I'll have to try and let you know!

Emily's Oatmeal Cookies
1 c. white sugar
1 c. brown sugar
1 c. butter
2 eggs
1 tsp. vanilla
2 c. flour
2 1/2 c. oatmeal
1/2 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
12 oz. chocolate chips (I actually think this is too many)
Preheat oven to 375 (the recipe says 350, but I think 375 works better). Blend sugars, butter, eggs, and vanilla. Mix with remaining ingredients. Roll into balls and place on ungreased cookie sheet. Bake 10 minutes.
Price Guesstimate: Again, I'm at a loss when it's baking goods! Sorry! :)
Steph's Comments: Sorry to do 2 cookie recipes so close together, but this recipe along with the one I did last week are my go-to cookie recipes. They always turn out superb. I made these cookies this morning with my kids and their friends and I think I've had 5... and that after I made a goal not to have treats! They're just so yummy! :) I got this recipe from my cousin, Helen, and I guess she got it from her roommate, Emily, who says it's her version of the famous Neimann Marcus cookies!

Peanut Butter Oatmeal Rounds

1 c. granulated sugar
1/2 c. packed brown sugar
1 tsp. baking powder
1/2 tsp. baking soda
2 eggs
1 tsp. vanilla
1 1/4 c. flour
2 c. rolled oats
Mix butter and peanut butter. Add granuated sugar, brown sugar, baking powder, and baking soda. Beat until combined, scraping side of bowl occasionally. Beat in eggs and vanilla until combined. Add flour and oats. Drop on ungreased cookie sheet and bake at 375 for 10 minutes. Don't over cook!
Price Guessimate: I'm sorry, I just can't guess when I'm using small amounts of baking goods!
Steph's Comments: These are the best peanut butter cookies E.V.E.R!!!!!! I just had to share them. Every time I make them they're a big hit. And cookies are a fun thing to do with your kids, and make a fun (albeit, not so healthy) snack to have around. These are just great cookies! I got them out of my Better Homes & Gardens Cookbook.
