1 c. buttermilk (or 1 c. milk and 1 TB lemon juice)
1 beaten egg
1/3 - 1/2 c. oil
1/2 c. brown sugar
1 c. white or whole wheat flour
1/2 tsp. soda
1 1/2 tsp. baking powder
1/2 tsp. salt
Pour buttermilk over oatmeal and soak. Add oil and egg, then brown sugar. Mix flour, salt, baking powder, and soda. Add dry ingredients to wet. Mix just until moistened. Bake 400 for 15-20 minutes.
Steph's Comments: Sorry to do another breakfast item right in a row, but I love these muffins. They make breakfast cheap, and they also make another great snack. They are pretty crumbly, so just be aware of that. If anyone has any suggestions on how to make them less crumbly, I would love to know! But they are very tatsy! :) This is a recipe I got from my Aunt Lynn Marie, who got it from her mom, my Grandma. It's a definitely family staple.
