Blender Wheat Pancakes

1 c. milk
1 c. uncooked whole wheat
2 eggs
2 TB oil/applesauce
2 t. baking powder
2 TB honey/sugar
1/2 t. salt

Put milk and wheat in blender. Blend on highest speed 4-5 minutes or until smooth. (Be careful to not burn out your blender! - I have to give my blender breaks every minute or so.) Add everything else and blend on low. Bake on hot griddle. Top with butter, syrup, bananas, whip cream, or whatever you want! Baking tips: You'll know when the griddle's hot enough if you can splash a little water on it and the water bounces around. Also, the pancakes are ready to turn when the top is bubbly - only turn ONCE!

Steph's Comments: I got this recipe from my mom - she used to make this for all of us kids when I was growing up. I love, love, love these pancakes for several reasons: 1. They are filling, so they make a great breakfast-for-dinner item. 2. They give my kids some needed fiber (a-hem!) in a tasty way. 3. They are so yummy that they also make great snacks - throw some peanut butter on them, and you have a healthy, yummy snack! 4. They are CHEAP! This is a gotta-have recipe.

  1. I LOVED these growing up, but since I don't have the recipe, I kind of forgot about that. I will definitely be adding these to our menu! Thanks!
