Crockpot Refried Beans

2 lb. dry pinto beans
1 yellow onion
celery (optional)
2 t salt
2 t. beef bouillon (opt.)
1 Tb chili powder
2 t cumen
1 t oregano

Place beans in a saucepan and cover with water. Bring to a boil. Let sit for 2 minutes. Drain. Put fresh water into the crockpot until it's 2/3 - 3/4 full. Add beans making sure they are fully covered by the water. Score the onion and place in the crockpot. Add celery if desired. Add salt. Cook all day on High (about 8 hrs). 30 minutes before you're ready to eat spoon out as much water as you can. Use a potato masher to mash up the beans. Add chili powder, cumen and oregano. Taste and adjust if necessary.

Price Guesstimate: $3 (this is a total guess b/c of the spices used, but dried beans are incredibly cheap!)

Steph's Comments: My sister Rachel sent me this recipe, and I was so glad because I LOVE THIS RECIPE! My mom made it all the time growing up, and it was always one of my favorite meals. One thing, though, I always end up adding WAY more salt and spices at the end when I'm mashing - I like my beans really full of flavor, so just be ready to add a ton more than you might think. This a GREAT way to use CHEAP dried beans.

  1. Does this recipe make a lot, since it uses 2 lbs. of beans? If so, do you know if you can freeze the extra, or would it not turn out very good when you reheat it?

  2. I'm so glad you asked because I forgot to put how much it makes! It makes enough to fill a good size crockpot - however many servings that is. And, yes, you can freeze the extras - it should turn out great. One time my re-heated beans didn't work great, but that's because I had messed up the original recipe... so, as long as you don't mess up like me, the frozen and reheated beans should work fine! :)

  3. I usually just soak the beans overnight in the fridge instead. More time, but less work ;D. Mine have always frozen well. I love how there's no shortening in these--unlike the canned variety--YUCK! We usually make a bean dip with ours for dinner--but for that we put it in a blender instead of just mashing them.
