1 pkg. of tostada shells (the hard ones - I've tried it with just corn tortillas and it's not nearly as good!)
1 can refried beans
1 pkt of Taco Seasoning
Optional toppings:
Shredded cheese
Diced Tomatoes
Sour Cream/Ranch
Salsa
Chopped lettuce
Set oven on broil. Place shells on a cookie sheet. Mix taco seasoning with refried beans. Top shells with refried beans and, if desired, cheese or other toppings. Put in oven and watch carefully - it only takes a couple of minutes! Top with other desired toppings. Enjoy!
Price Guesstimate: $4-6 depending on toppings
Steph's Comments: My sister, Rachel, reminded me about this yummy and SUPER easy, cheap meal. They're fun b/c they're slightly different from just tacos or burritos. Just serve with a can of corn and some fruit and you've got a good, basic meal, and that's what this blog is all about - good, SIMPLE reminders! :)
