Zucchini Marinara Subs

1 TBS olive oil
2 medium zucchini, diced (cut lengthwise into fourths and the diced into 1/2  inch chunks)
2 mushrooms, sliced (opt.)
1 clove of garlic, minced
salt and pepper to taste
3/4 – 1 cup marinara sauce (depending on how saucy you want it)
4 slices provolone cheese (I used cheddar) 
4 (6 inch) crusty French or Italian sandwich rolls, split



In a skillet over medium heat, fry the zucchini and mushrooms in olive oil until browned and  tender. Season with salt and pepper. Add garlic to mixture and saute for 1 min. Stir in the marinara sauce and cook until sauce is heated. Place a slice of cheese on each roll and broil in oven until cheese is melted. Divide zucchini mixture evenly between the four rolls and enjoy.

Steph's Comments: I got this recipe from this blog. It's one of my favorites. I made it last summer during zucchini season and I FELL IN LOVE. In fact, I have been looking forward to zucchini season specifically for THIS recipe. Oh it's so good! The only thing I changed was that instead of broiling the rolls with cheese before adding the zucchini mixture, I put the mixture on, topped it with cheese and broiled it (I liked the cheese on top and everything broiled together). Seriously, these are absolutely delicious!
